Garlic Oven Roasted Sweet Potatoes


Sweet potatoes are not everyone's cup of tea, but here in Egypt it is a staple 'street' food, being sold on wooden carts with a mini furnace for roasting the tubers. You can get this cheap snack almost everywhere handed to you in a ripped piece of newspaper. The sweet, creamy, tongue burning Egyptian snack is not really used otherwise, other than a pudding.

We love roasted potatoes, so two Thanksgivings ago, I tried this and it was a hit. So simple to make yet so popular with everyone, I ended up making it in several dinner parties as well.

If you want to try something simple, or you want to just rev up your Thanksgiving menu, this recipe is a must try.

Ingredients:

- Sweet potatoes, washed, peeled and cut into cubes [The amount isn't important, but 1 kg is about 4-6 servings]

- 2 Tbsp oil

- Minced garlic

- Chopped parsley

- Paprika, and salt

Preparation:


Mix all ingredients together and make sure to mix with your hands to make sure all the potatoes are covered with the marinade. Put in a pan big enough for there to be only one row of potatoes, this will allow them to be crispy but creamy on the inside. Add half a cup of water and put in the oven on a high heat setting [between 200 - 220 Celsius]. Check after about 30-40 mins, they should be crispy on the outside, and creamy on the inside. Be careful not to overcook or they will fall apart.
